Ingredients:

  1. 1 cup whole wheat flour (approximately 120 grams)
  2. ½ cup raw sugar or unrefined cane sugar (about 80 grams), or ½ cup + 1 tablespoon powdered sugar
  3. 15 to 18 cashews or almonds, or a combination of both
  4. 15 to 18 raisins
  5. 4 tablespoons desi ghee (clarified butter)

Instructions:

  1. Grind ½ cup sugar into a fine powder using a dry grinder and set aside.
  2. Warm a sturdy-bottomed pan or kadai over a gentle flame.
  3. Add 1 cup of whole wheat flour to the pan.
  4. Continuously stir the flour to ensure even roasting.
  5. Roast until the color changes and a nutty aroma emanates from the flour, which usually takes about 9 to 12 minutes over low flame.
  6. Once roasted, add 4 tablespoons of ghee to the flour and mix thoroughly.
  7. If using almonds, roast them separately in a pan before adding.
  8. Continue stirring and roasting the mixture for an additional 5 to 6 minutes until the whole wheat flour is cooked and devoid of any raw taste.
  9. Turn off the heat and remove the pan from the stove.
  10. Add the powdered sugar to the mixture and mix well.
  11. Incorporate the raisins into the mixture.
  12. Allow the panjiri to cool down.
  13. Store it in an airtight container and serve as desired.
