Ingredients:
- 1 cup whole wheat flour (approximately 120 grams)
- ½ cup raw sugar or unrefined cane sugar (about 80 grams), or ½ cup + 1 tablespoon powdered sugar
- 15 to 18 cashews or almonds, or a combination of both
- 15 to 18 raisins
- 4 tablespoons desi ghee (clarified butter)

Instructions:
- Grind ½ cup sugar into a fine powder using a dry grinder and set aside.
- Warm a sturdy-bottomed pan or kadai over a gentle flame.
- Add 1 cup of whole wheat flour to the pan.
- Continuously stir the flour to ensure even roasting.
- Roast until the color changes and a nutty aroma emanates from the flour, which usually takes about 9 to 12 minutes over low flame.
- Once roasted, add 4 tablespoons of ghee to the flour and mix thoroughly.
- If using almonds, roast them separately in a pan before adding.
- Continue stirring and roasting the mixture for an additional 5 to 6 minutes until the whole wheat flour is cooked and devoid of any raw taste.
- Turn off the heat and remove the pan from the stove.
- Add the powdered sugar to the mixture and mix well.
- Incorporate the raisins into the mixture.
- Allow the panjiri to cool down.
- Store it in an airtight container and serve as desired.
