Ingredients:

For Paneer Marination:

  1. 6 tablespoons Hung Curd or thick Greek yogurt
  2. ½ tablespoon Ginger Garlic Paste or 1 inch ginger + 3 medium garlic cloves – crushed
  3. ¼ teaspoon carom seeds (ajwain)
  4. ¼ teaspoon turmeric powder
  5. ½ teaspoon Coriander Powder
  6. ½ teaspoon cumin powder
  7. ½ teaspoon Garam Masala
  8. ½ teaspoon dry mango powder (amchur powder)
  9. ¼ teaspoon chaat masala powder (optional)
  10. 1 teaspoon Kashmiri red chilli powder
  11. Black salt or regular salt, as needed
  12. 1 teaspoon lemon juice
  13. 200 grams Paneer (Indian cottage cheese)

For Green Chutney:

  1. ½ cup coriander leaves (can substitute with 1 cup of coriander leaves if mint is unavailable)
  2. ½ cup mint leaves
  3. 1 green chilli
  4. 1 inch ginger, chopped
  5. 1 to 2 garlic cloves, minced
  6. ¼ teaspoon dry mango powder
  7. 2 tablespoons hung yogurt or thick Greek yogurt
  8. ½ teaspoon roasted cumin powder
  9. 1 teaspoon water (optional)

For the Dough:

  1. 1 cup whole wheat flour
  2. ¼ teaspoon salt
  3. ½ tablespoon oil
  4. ½ cup water
  5. Oil or ghee for roasting rotis

For Veggie Salad:

  1. ⅓ cup shredded cabbage
  2. ⅓ cup grated carrots
  3. ⅓ cup thinly sliced capsicum (bell pepper)
  4. ⅓ cup thinly sliced onions
  5. ¼ teaspoon Kashmiri red chilli powder
  6. 1 teaspoon chaat masala
  7. 1 teaspoon lemon juice
  8. Salt, to taste

Other Ingredients:

  1. 2 tablespoons oil for pan-frying paneer

Instructions:

Preparing Paneer Tikka:

  1. In a mixing bowl, combine all marination ingredients except paneer. Blend well and adjust salt to taste, if needed.
  2. Add paneer cubes to the mixture and coat evenly. Cover and set aside for 30 minutes. Refrigerate if marinating for longer.

Preparing Green Chutney:

  1. Blend all green chutney ingredients in a grinder until coarse. Add water if needed.
  2. Add hung yogurt and blend into a smooth chutney. Set aside or refrigerate.

Making Veggie Salad:

  1. In a bowl, combine all vegetable salad ingredients. Mix well and set aside.

Kneading Dough:

  1. In a mixing bowl, combine whole wheat flour, oil, and salt. Gradually add water and knead into a smooth dough. Cover and let it rest for 20-30 minutes.

Making Roti:

  1. Divide the dough into small or medium-sized balls. Roll each ball into thin rotis on a floured surface.
  2. Cook rotis on a hot skillet until bubbles appear, then flip. Cook until golden brown, adding oil or ghee as needed.

Making Paneer Tikka:

  1. Heat oil in a pan and add marinated paneer cubes. Fry on low to medium heat until cooked through, stirring occasionally.

Assembling Paneer Roll:

  1. Spread green chutney on a roti.
  2. Place paneer tikka cubes in the center and top with veggie salad.
  3. Roll the roti, enclosing the filling.
  4. Wrap the roll in butter paper or aluminum foil.
  5. Serve with extra chutney or tomato ketchup, optionally garnished with veggie salad.
