Ingredients:
For Paneer Marination:
- 6 tablespoons Hung Curd or thick Greek yogurt
- ½ tablespoon Ginger Garlic Paste or 1 inch ginger + 3 medium garlic cloves – crushed
- ¼ teaspoon carom seeds (ajwain)
- ¼ teaspoon turmeric powder
- ½ teaspoon Coriander Powder
- ½ teaspoon cumin powder
- ½ teaspoon Garam Masala
- ½ teaspoon dry mango powder (amchur powder)
- ¼ teaspoon chaat masala powder (optional)
- 1 teaspoon Kashmiri red chilli powder
- Black salt or regular salt, as needed
- 1 teaspoon lemon juice
- 200 grams Paneer (Indian cottage cheese)

For Green Chutney:
- ½ cup coriander leaves (can substitute with 1 cup of coriander leaves if mint is unavailable)
- ½ cup mint leaves
- 1 green chilli
- 1 inch ginger, chopped
- 1 to 2 garlic cloves, minced
- ¼ teaspoon dry mango powder
- 2 tablespoons hung yogurt or thick Greek yogurt
- ½ teaspoon roasted cumin powder
- 1 teaspoon water (optional)
For the Dough:
- 1 cup whole wheat flour
- ¼ teaspoon salt
- ½ tablespoon oil
- ½ cup water
- Oil or ghee for roasting rotis
For Veggie Salad:
- ⅓ cup shredded cabbage
- ⅓ cup grated carrots
- ⅓ cup thinly sliced capsicum (bell pepper)
- ⅓ cup thinly sliced onions
- ¼ teaspoon Kashmiri red chilli powder
- 1 teaspoon chaat masala
- 1 teaspoon lemon juice
- Salt, to taste
Other Ingredients:
- 2 tablespoons oil for pan-frying paneer
Instructions:
Preparing Paneer Tikka:
- In a mixing bowl, combine all marination ingredients except paneer. Blend well and adjust salt to taste, if needed.
- Add paneer cubes to the mixture and coat evenly. Cover and set aside for 30 minutes. Refrigerate if marinating for longer.
Preparing Green Chutney:
- Blend all green chutney ingredients in a grinder until coarse. Add water if needed.
- Add hung yogurt and blend into a smooth chutney. Set aside or refrigerate.
Making Veggie Salad:
- In a bowl, combine all vegetable salad ingredients. Mix well and set aside.
Kneading Dough:
- In a mixing bowl, combine whole wheat flour, oil, and salt. Gradually add water and knead into a smooth dough. Cover and let it rest for 20-30 minutes.

Making Roti:
- Divide the dough into small or medium-sized balls. Roll each ball into thin rotis on a floured surface.
- Cook rotis on a hot skillet until bubbles appear, then flip. Cook until golden brown, adding oil or ghee as needed.
Making Paneer Tikka:
- Heat oil in a pan and add marinated paneer cubes. Fry on low to medium heat until cooked through, stirring occasionally.
Assembling Paneer Roll:
- Spread green chutney on a roti.
- Place paneer tikka cubes in the center and top with veggie salad.
- Roll the roti, enclosing the filling.
- Wrap the roll in butter paper or aluminum foil.
