Ingredients:

Main Ingredients:

  • ⅓ cup finely chopped onions (or 1 medium-sized onion)
  • 1 cup finely chopped tomatoes (or 2 medium-sized tomatoes)
  • ½ cup chopped capsicum
  • 3 to 4 garlic cloves, small to medium-sized
  • ½ inch ginger
  • 1 to 2 green chilies
  • ½ teaspoon cumin seeds
  • ¼ teaspoon turmeric powder
  • ½ teaspoon red chili powder
  • 3 to 4 teaspoons Pav Bhaji Masala (adjust to taste)
  • 2 tablespoons butter
  • ⅓ cup water
  • Salt to taste
  • 4 to 5 Pav (dinner rolls), sliced in half
  • 1 to 2 tablespoons butter for toasting pav

For Garnish:

  • ¼ to ⅓ cup finely chopped onions (or 1 small to medium-sized onion)
  • 1 lemon or lime, chopped or quartered
  • 2 tablespoons chopped coriander leaves (cilantro)

Instructions:

Preparation:

  1. Slice all the pav or dinner rolls into equal halves and set aside.
  2. Rinse and finely chop onions, tomatoes, and capsicum.
  3. Crush garlic cloves, ginger, and green chilies into a paste using a mortar and pestle. Set aside.

Making the Masala:

  1. Heat a medium or large-sized tava (skillet) or shallow frying pan.
  2. Melt 2 tablespoons of butter. Alternatively, use oil.
  3. Add cumin seeds and let them splutter.
  4. Add the crushed ginger-garlic-green chilies paste and sauté briefly until the raw aroma fades.
  5. Stir in the chopped onions and sauté until translucent.
  6. Add chopped tomatoes and sauté for 3 to 4 minutes over medium-low to medium heat.
  7. Add turmeric, red chili and pav bhaji masala. Adjust masala to taste.
  8. Mix the spices with the onion tomato mixture.
  9. Add capsicum and sauté for 2 minutes.
  10. Season with salt, then add water and stir to combine.
  11. Simmer until the mixture thickens and reduces.

Making Masala Pav:

  1. Melt 1 to 2 tablespoons of butter in the center of the pan.
  2. Place the pav slices on the butter and lightly toast them.
  3. Turn over and toast the other side, adding more butter if desired.
  4. Spread the sautéed masala mixture evenly over the pav halves.
  5. Transfer the pav to a serving plate.
  6. Repeat the toasting process with the remaining pav and masala.
  7. Garnish with chopped onions, coriander leaves, and lemon wedges.
  8. Serve hot, optionally drizzling lemon juice over the masala pav.
