Ingredients:

  1. 2 to 3 large urad dal papads 
  2. 1 medium-sized onion, finely chopped (about 1/2 cup)
  3. 1 medium-sized tomato, finely chopped (about 1/2 cup)
  4. 2 tablespoons chopped fresh coriander leaves (cilantro)
  5. 1 teaspoon lime juice (or lemon juice), or as needed
  6. 1/2 teaspoon red chili powder (or 1-2 finely chopped green chilies)
  7. 1 teaspoon roasted cumin powder (optional)
  8. 1 teaspoon chaat masala, or as needed
  9. Salt, to taste
  10. Oil, for shallow frying the papad

Instructions:

  1. In a bowl, combine finely chopped onions, tomatoes, red chili powder, roasted cumin powder (if using), chaat masala, and salt to make the masala topping. Add lime or lemon juice and mix thoroughly. Adjust seasoning according to taste. Prepare this masala filling just before frying the papad.
  2. Heat oil for shallow frying in a pan. Carefully slide the papad into the hot oil.
  3. Fry the papad on medium to medium-high heat for a few seconds until crispy. Avoid browning them. Remove the fried papad using a slotted spoon or tongs and drain excess oil. Fry the remaining papad in batches.
  4. Place the fried papad on a paper towel to absorb excess oil. You can flip them once to ensure both sides are drained.
  5. If serving later, store the fried papad in an airtight container to maintain crispiness.
  6. Spoon the prepared masala filling onto the fried papad and sprinkle with chopped coriander leaves.
  7. Serve Masala Papad immediately to enjoy the crispy texture.
