Ingredients

For Manchow Soup

  1. 1 tablespoon sesame oil or any other preferred oil
  2. ½ to 1 teaspoon finely chopped fresh red chilies, or 1 to 2 green chillies, or fresh red chillies
  3. 1 teaspoon finely chopped ginger
  4. 1 teaspoon finely chopped garlic
  5. ¼ cup finely chopped onions or ¼ cup spring onion whites
  6. ¼ cup sliced or chopped button mushrooms
  7. ¼ cup finely chopped french beans
  8. ¼ cup shredded cabbage
  9. ¼ cup grated or finely chopped carrots
  10. ¼ cup chopped capsicum
  11. 1 teaspoon finely chopped celery (optional)
  12. ¼ teaspoon black pepper powder or white pepper powder, to taste
  13. 2 teaspoons soy sauce, or to taste
  14. 3 cups water or vegetable stock
  15. 2 tablespoons cornstarch dissolved in 2 tablespoons water
  16. ½ teaspoon rice vinegar or regular white vinegar (optional)
  17. 2 teaspoons finely chopped coriander leaves (cilantro) or 1 to 2 tablespoons spring onion greens, for garnish (optional)
  18. Salt, to taste
  19. For Fried Noodles (optional)
  20. ⅓ cup cooked noodles
  21. 1 teaspoon cornstarch for coating noodles
  22. Oil for deep frying, as required

Instructions

Stir-Frying Veggies

  1. Rinse and chop all the vegetables and mushrooms, then set aside.
  2. Heat oil in a wok or pan, add chopped fresh red chilies, garlic, and ginger. Sauté on low heat for 8 to 10 seconds, then add chopped onions or spring onions. Sauté for another minute.
  3. Add french beans and mushrooms. Stir-fry on medium to high heat until mushrooms are lightly browned.
  4. Add carrots, cabbage, capsicum, and celery. Stir-fry for 3 to 4 minutes.
  5. Once vegetables are stir-fried, add soy sauce and black pepper. Mix well.

Making Manchow Soup

  1. Add water or vegetable stock to the stir-fried vegetables. Season with salt and bring to a simmer on medium heat.
  2. Make a smooth slurry or paste of cornstarch with water.
  3. Reduce heat to low and add the cornstarch slurry to the soup. Mix well and let it thicken by simmering on medium-low to medium heat.
  4. Lastly, add rice vinegar if desired. Turn off the heat and adjust seasoning if necessary.
  5. Optionally, coat cooked noodles with cornstarch and fry until crisp. Drain on kitchen paper towels.
  6. Serve Manchow Soup hot, optionally topped with fried noodles. Garnish with chopped coriander leaves or spring onion greens.

  1. For a spicier soup, add more green or red chilies or incorporate a spicy red chili sauce. Adjust black pepper to taste.
