Ingredients
For Manchow Soup
- 1 tablespoon sesame oil or any other preferred oil
- ½ to 1 teaspoon finely chopped fresh red chilies, or 1 to 2 green chillies, or fresh red chillies
- 1 teaspoon finely chopped ginger
- 1 teaspoon finely chopped garlic
- ¼ cup finely chopped onions or ¼ cup spring onion whites
- ¼ cup sliced or chopped button mushrooms
- ¼ cup finely chopped french beans
- ¼ cup shredded cabbage
- ¼ cup grated or finely chopped carrots
- ¼ cup chopped capsicum
- 1 teaspoon finely chopped celery (optional)
- ¼ teaspoon black pepper powder or white pepper powder, to taste
- 2 teaspoons soy sauce, or to taste
- 3 cups water or vegetable stock
- 2 tablespoons cornstarch dissolved in 2 tablespoons water
- ½ teaspoon rice vinegar or regular white vinegar (optional)
- 2 teaspoons finely chopped coriander leaves (cilantro) or 1 to 2 tablespoons spring onion greens, for garnish (optional)
- Salt, to taste
- For Fried Noodles (optional)
- ⅓ cup cooked noodles
- 1 teaspoon cornstarch for coating noodles
- Oil for deep frying, as required

Instructions
Stir-Frying Veggies
- Rinse and chop all the vegetables and mushrooms, then set aside.
- Heat oil in a wok or pan, add chopped fresh red chilies, garlic, and ginger. Sauté on low heat for 8 to 10 seconds, then add chopped onions or spring onions. Sauté for another minute.
- Add french beans and mushrooms. Stir-fry on medium to high heat until mushrooms are lightly browned.
- Add carrots, cabbage, capsicum, and celery. Stir-fry for 3 to 4 minutes.
- Once vegetables are stir-fried, add soy sauce and black pepper. Mix well.
Making Manchow Soup
- Add water or vegetable stock to the stir-fried vegetables. Season with salt and bring to a simmer on medium heat.
- Make a smooth slurry or paste of cornstarch with water.
- Reduce heat to low and add the cornstarch slurry to the soup. Mix well and let it thicken by simmering on medium-low to medium heat.
- Lastly, add rice vinegar if desired. Turn off the heat and adjust seasoning if necessary.
- Optionally, coat cooked noodles with cornstarch and fry until crisp. Drain on kitchen paper towels.
- Serve Manchow Soup hot, optionally topped with fried noodles. Garnish with chopped coriander leaves or spring onion greens.
