Ingredients:
For Cooking Pasta:
- 2 cups fusilli pasta
- 4 cups water
- ½ teaspoon salt, or as needed
For Arrabbiata Sauce:
- 2 cups chopped tomatoes (220 grams), or 2 large tomatoes, or 2 cups tomato purée
- 1 teaspoon finely chopped garlic (5 grams)
- 2 teaspoons chili flakes, or to taste (substitute with ½ to 1 teaspoon red chili powder or cayenne)
- 2 tablespoons olive oil
- ¼ teaspoon dried oregano, or to taste
- 1 tablespoon chopped basil leaves, or 3 to 4 basil leaves, or 1 teaspoon dried basil
- ¼ teaspoon black pepper powder, or to taste
- ¼ teaspoon sugar (optional)
- ¼ cup water (optional)
- 2 to 3 tablespoons vegetarian parmesan cheese, or preferred cheese (optional)

Instructions:
Cooking Pasta:
- In a pot, bring water and salt to a boil.
- Add fusilli pasta and cook until al dente or to desired softness.
- Strain the pasta and set aside.
Making Arrabbiata Sauce:
- Blend or process chopped tomatoes into a smooth puree without adding water.
- Heat olive oil in a pan, sauté garlic briefly, then add chili flakes and mix.
- Incorporate the tomato puree, add salt, and cover the pan, simmering on low heat for 10 to 12 minutes until the raw tomato flavor dissipates.
- Add water if needed to prevent sticking.
- Once oil specks appear on the sauce, it’s cooked.
- Stir in oregano, black pepper, and sugar if desired.
Assembling Arrabbiata Pasta:
- Add cooked pasta to the sauce, ensuring even coating.
- Turn off heat, mix in chopped basil leaves gently.
