Ingredients:

  1. 1 medium to large carrot
  2. 1 medium to large potato
  3. ½ cup green peas
  4. ¼ cup French beans, chopped
  5. ¾ to 1 cup Eggless Mayonnaise
  6. 1 small stick of celery, finely chopped
  7. Salt, as required
  8. Black pepper powder, as required (optional)
  9. For garnish:
  10. Lettuce leaves, as required
  11. Slices of tomato, cucumber, or capsicum (bell pepper)

Instructions:

  1. Boil the carrot, potato, peas, and French beans in a pan with enough water to cover them.
  2. Alternatively, you can cook them in a stovetop pressure cooker or an Instant Pot until softened and tender.
  3. Once cooked, drain the water and allow the vegetables to cool slightly.
  4. Peel the potato and carrots, then chop them along with the other vegetables.

Note: Chopping the vegetables before boiling may cause loss of water-soluble vitamins and minerals. It’s preferable to boil them whole first and then chop them.

  1. Chop the celery and set it aside.
  2. In a mixing bowl, combine the chopped vegetables and celery with the mayonnaise, salt, and black pepper.
  3. Garnish the salad with lettuce leaves and slices of tomato, cucumber, or capsicum. You can also serve the salad on a bed of lettuce leaves or mix them with the remaining ingredients.
