Ingredients:

  1. ½ tablespoon sabja seeds (sweet basil seeds, also known as falooda seeds or tukmaria seeds)
  2. Water, as required, for soaking sabja seeds
  3. ⅓ cup falooda sev
  4. Water, as needed, for cooking falooda sev
  5. 4 kulfi (preferably in your favorite flavor)
  6. 2 tablespoons rose syrup (or you can opt for khus syrup)
  7. 1 to 2 tablespoons chopped pistachios
  8. 1 to 2 tablespoons chopped cashews (or substitute almond slivers)

Instructions:

  1. Soak the sabja seeds in enough water for 30 minutes until they swell. Once soaked, strain and set aside. You can refrigerate the soaked seeds until needed.
  2. Follow the instructions on the package to prepare the falooda sev. If cooking, simmer them over medium-low to medium heat, adding water as necessary. Once softened, rinse the falooda sev in water, drain any excess water, and let them cool completely.
  3. Remove the kulfi from the molds and slice them into 2 or 4 pieces. Arrange each kulfi with its slices in serving bowls or small plates.
  4. Sprinkle 1 tablespoon of sabja seeds over the sliced kulfi in each bowl.
  5. Sprinkle 1 to 1.5 tablespoons of cooked falooda sev on top.
  6. Drizzle ½ tablespoon of rose syrup over each serving. Sprinkle with the chopped nuts or your preferred dry fruits.
  7. Serve immediately and enjoy the delightful fusion of flavors and textures.

Notes:

  • If falooda sev is unavailable, you can use semolina or sooji vermicelli, or whole wheat vermicelli as alternatives.
  • Chia seeds can be substituted for sweet basil seeds.
  • Feel free to use your favorite kulfi flavor for this recipe, such as pista, mawa, or mango.
  • For added richness, you can top the kulfi with malai (clotted cream) or fresh cream before serving.
