Ingredients:

  1. 1 small carrot or approximately 50 grams of carrots, grated (about ¼ cup)
  2. 5 to 6 button mushrooms or ¾ cup sliced mushrooms
  3. ¼ cup shredded cabbage
  4. ¼ cup finely chopped French beans
  5. 1 small onion
  6. 1 teaspoon finely chopped garlic
  7. 1 teaspoon finely chopped ginger
  8. 2 teaspoons finely chopped celery (optional)
  9. 4 to 5 teaspoons cornstarch mixed with 2 tablespoons water (for a slightly thicker consistency, mix 6 to 7 teaspoons cornstarch with 3 tablespoons water)
  10. ¾ teaspoon black pepper powder
  11. 3 teaspoons soy sauce (naturally brewed), or as needed
  12. 2 teaspoons rice vinegar, or as needed
  13. 2.5 cups water or vegetable stock
  14. 2 to 3 teaspoons coriander leaves 
  15. 1 tablespoon oil 
  16. Salt, to taste

Instructions:

Preparation:

  1. Begin by rinsing and shredding the cabbage and French beans.
  2. Wipe the mushrooms gently with a damp cloth and thinly slice them. Alternatively, you can rinse them under fresh water.
  3. Peel and grate the carrots. Finely chop the onions, ginger, celery, and garlic.

Stir-Frying Vegetables:

  1. Heat oil in a pan or wok.
  2. Add finely chopped onions, ginger, and garlic. Cook over medium heat, stirring occasionally, for approximately 2 minutes.
  3. Incorporate the finely chopped French beans. Stir and incorporate the sliced mushrooms.
  4. Stir-fry over medium to high heat until the mushrooms develop a light brown hue around the edges.
  5. Meanwhile, prepare a paste of cornstarch and water and set it aside.
  6. Once the mushrooms are lightly browned (approximately 5 to 6 minutes on medium to high heat), add the carrots, cabbage, and celery.
  7. Stir-fry these vegetables on high heat for 2 to 3 minutes.

Making Hot and Sour Soup:

  1. Pour in water or vegetable stock. Stir well and add soy sauce.
  2. Season with salt, bearing in mind that soy sauce already contains salt.
  3. Bring the soup to a simmer over medium heat.
  4. Stir the cornstarch paste and add it to the soup. Thoroughly mix.
  5. Allow the soup to thicken over low to medium heat.
  6. Once the hot and sour soup has thickened, add black pepper or white pepper and vinegar.
  7. Give it a final stir, then turn off the heat.
  8. Taste and adjust seasoning by adding more soy sauce, vinegar, salt, or black pepper if necessary.

Serve the hot and sour soup piping hot, garnished with chopped coriander leaves (cilantro) or spring onion greens. Alternatively, you can add the cilantro just before serving.
