Ingredients:

  1. 1.5 litres chilled water or water at room temperature
  2. 6 tablespoons of sattu (roasted black chickpea flour)
  3. 4 to 6 tablespoons of regular sugar, organic unrefined cane sugar, or jaggery – adjust according to taste
  4. ¼ teaspoon of black salt or 2 to 3 pinches of black salt (optional)

Instructions:

  1. Pour chilled water into individual glasses or into a jug.
  2. Add 2 tablespoons of sattu to each glass.
  3. Sweeten with sugar or jaggery to taste, typically 2 to 3 teaspoons per serving.
  4. Optionally, sprinkle a pinch of black salt into each glass for a hint of tanginess. For an extra zing, consider adding lemon or lime juice.
  5. Stir thoroughly to ensure all ingredients are well combined.
  6. Serve immediately after mixing, or refrigerate for a while before serving. Note that the flour may settle, so give it a good stir before serving if it’s been chilled.
